Ingredients:
- 1/2 cup (120mL) unsalted butter at room temp.
- 1/2 cup (120mL) light brown sugar
- 1 large egg
- 1 Tbsp. (15mL) vanilla extract
- 1 cup (240mL) all-purpose flour

- 1/2 cup (120mL) Sugar Twin® Granulated White
- 1/2 tsp (2.5mL) baking soda
- pinch of salt
- 1/2 cup (120mL) cocoa powder, unsweetened
- 1/2 cup (120mL) semi-sweet chocolate chips
- Baker’s Joy® non-stick baking spray with flour

Instructions:
Preheat oven to 350°F (180°C). Cream butter until soft. Mix in brown sugar until smooth. Add egg and vanilla, beat until smooth. Mix together flour, Sugar Twin®, baking soda, salt, and cocoa powder. Beat together butter mixture and flour mixture until a stiff batter forms, add chocolate chips. Lightly grease cookie sheets. Form cookies with a small spoon and place on cookie sheets about 2" (5cm) apart. Bake for 8-10 minutes, do not over-bake. Cookies should be firm around the edges and bottom, and soft in the middle. Let cool slightly before removing to racks.
